I know Justapedia is mentioned on this forum a few times, but I don't really know of any others, other than RationalWiki and Conservapedia which have been around forever.
Which ones do you think are actually a good resource and while none seem to be able to overtake Wikipedia, some seem to provide a valuable resource in spite of WP's existence.
Scholarpedia seems alright. Larry Sanger started Citizendium, seems like a copy of early WP, don't know what it's like.
The WP list is not exhaustive, because it lists "well-known" or "notable" encyclopedias, so I guess all the ones with an article about them on the internet.

There are at least 46,380 active wikis, a majority of which attempt to be an encyclopedia about some topic or many topics.

Attempts to replace Wikipedia at its own game using its own software will likely fail for dozens of reasons brought up in this forum. At the moment it seems AI chatbots will be Wikipedia's replacement as Wikipedia is becoming less popular on its own and the chatbots offer the same kind of mindless google synthesis, but less biased overall and incredibly more efficient.
